Pico de Gallo
--You can eat this with just about anything. Enjoy like a salsa with tortilla chips, use as a topper for fish or chicken, mix in with ranch dressing to make a spicy salad dressing, as a condiment on fajitas, carnitas or tacos, or mix into scrambled eggs to make a great breakfast burrito filling.
yields about 4 cups

Ingredients
3-4 large roma tomatoes
1/2 large spanish onion
4-5 jalapeño peppers
1 medium lime
1 bunch cilantro
1/4 t sea salt

Directions
Seed jalapeños and roma tomatoes. Reserve jalapeño seeds.

Chop onion, roma tomatoes, and jalapeños* into a uniform dice. Transfer to medium sized bowl and add the juice of a lime, about 1/4 C chopped cilantro (more or less if you'd like), and 1/4 t sea salt. Top with lime zest from juiced lime and toss together to combine flavors!

Add jalapeño seeds to increase the heat, if desired! Enjoy!

* I wear rubber kitchen gloves when chopping jalapeños.The natural oil from the peppers will transfer to your skin and cause redness/burning.

You're very welcome...you know Flash and I only live about 45 minutes away from each other so if you're ever in town you should visit us both!
