Aunt Elaine's Molasses Crumb Cake
-- My Godmother's recipe for her favorite cake.
Ingredients
4 C flour
2 C brown sugar
1 T baking soda
1 t salt
3/4 C oil
1 C molasses
2 C boiling water
Directions
Preheat oven to 350 degrees.
Mix the flour, brown sugar, baking soda, salt, and oil until it resembles coarse crumbs. Set aside 3/4 C of the mixture.
Mix the molasses with the boiling water and pour into the crumbs. Stir until just mixed. The batter will be lumpy.
Pour into a lightly greased/oiled cake pan, top with the remaining 3/4 C of crumbs.
Bake for 40-45 minutes, or until cake tests as done.
