Please help me with some recipe ideas. :beg2:

I am looking for main dishes along with lunch ideas.

Our ingredients list is short and sweet. We can have:

eggs
berries
grapefruit, lemon, lime,
green apples, avocado, coconut
any kind of meat, fish, poultry
most veggies, no potatoes
oils: olive & coconut
raw nuts
butter
plain yogurt
sour cream
cream cheese
Stevia sweetner

This extreme low carb is doing wonders for my dh's blood sugar! However, I am mentally exhausted from choosing our menu each day. I really need some ideas and a better plan.

So I'd make an omelet with homemade salsa on the inside, and top it with smushed avocado and sour cream.

There's one, let's see what else is lurking out there...

Let's see. You could also roast a chicken How To Butterfly A Chicken - The Virtual Weber Bullet (http://www.virtualweberbullet.com/butterflychicken.html)

and roast some onions with it. Chop the onions in half and drizzle with olive oil. Only remove the papery outer layer.

Then make a veggie to go with it.

Those are great ideas, Der!

You could also make a chutney with the grapefruit, tomatoes, limes/lemons, and mango (if you can use it),cilantro, and put it over your grilled fish. DH made some grilled halibut awhile back and made the chutney and just put it on top. It was light and excellent! Make the chutney awhile ahead so the flavors can meld together. you might need to add a pinch of salt to bring out the sweetness of the veggies.

I have no idea how this would taste, but you can make a pie crust out of nuts here: Raw Food Pies (http://www.sunfood.net/pies-prep.html)

and then make a quiche? Eggs, broccoli, maybe some smoked salmon, etc.
