Raspberry Vinegar

Ingredients:
1/2 c raspberries
2 cups (570 ml) white wine vinegar

Method:
Push the raspberries into a glass bottle, pour over the vinegar, and fasten the lid. Allow to stand in a cool, dark place for at least two weeks, shaking gently daily, before using. Strain the berries out of the vinegar after two weeks if you wish, or leave them in.

Uses:
Sprinkle the raspberry vinegar on fruit salads, or use as part of a salad dressing or with chicken.

Variation: Elder Vinegar
Use three heads of elderberries, remove the berries from their cluster and lightly crush first.
