Strawberry Jam
(Makes 5 lbs)

Ingredients:
3 lbs fresh strawberries
juice of 2 lemons
3 lb unrefined sugar

Method:
Cook the fruit and juice in a thick-bottomed pan over a low heat until the juices run (10-15 mins). Add the sugar and stir until just dissolved. Bring to the boil and cook rapidly for 15 minutes. Test for the setting point (for help, see this post), then spoon into sanitized jars and seal.

Variation:
Strawberry and Lime jam
Use the juice of 1 lemon and 2 limes. Add the zest of 2 limes before putting the jam into jars.
