Default Garlic Potato Healing Soup

I guess this could also go under "vegetarian" and "natural remedies"! We just love to have it as often as possible during the cold winter months! It's awesome when you have a cold! FYI, I *always* double the recipe!



Garlic Potato Healing Soup
Adapted from The Findhorn Book of Vegetarian Recipes,
By Kay Lynne Sherman

This is a “folk remedy” for those days when you’re out of sorts and not feeling well. Comforting and packed with the healing power of garlic, this soup is good for what ails you!

This soup freezes very well also ~ so make a double batch!

INGREDIENTS

1 teaspoon caraway seeds, crushed with a mortar and pestle
3 cups chopped potatoes (or small diced, bite size pieces)
7 cups good quality vegetable (or chicken) broth, or water
6-8 cloves of garlic, crushed or run through a press
1 tablespoon butter
croutons for garnish (optional) ~ I opt for them!

1.Simmer potatoes and caraway seeds in stock or water for 20 minutes, or until potatoes are very soft.

2.Add crushed garlic and butter, stirring to combine thoroughly.

3.Serve hot with croutons on top if desired.

Serves 2-4

Thank you! When I do my menus, I like to have a recipe if there is one. That way I can link to the recipe, whether it's on my blog or on a website. I'm going to link OGD from there for this, then when I do my menu, I know it'll always be there. If that made any sense, LOL. BTW, this will prob. be going on the menu very soon. We're getting some "chilly" days. I figured I'd draft this & when I've made it I can post it!

I've just been busy. Super busy, We started HS'ing about 4 weeks ago, so that is taking up some time. Plus I've been getting my daycare girls more & we have been winterising the animals & spent a few days last week ripping up the garden- picking, moving, transplanting, cellaring, etc. Been canning a LOT as well.

It does make a lot of liquid, so you SHOULD be ok. I'd just add chicken stock if the liquid seems to drop a bunch.

Try what Michaela said. I really can't help you with it as I only used fresh, diced potatoes. It's supposed to be a really thin soup base. You can always adjust to your liking after you try it!
