Vegetarian Indian Spice Potatoes

This recipe is one dh and I first tried at my girlfriend's house many moons ago! It was actually "dinner" and dh and I were quite surprised (at that time, we were, um...pretty different eaters) that this was "all there was"! lol! We usually make this for a weekend lunch, light dinner or serve as a side. It is super appealing in the winter months, but truly good any other time!

Indian Spice Potatoes

Pita bread (small or large, your choice)
8-10 baking/mashing potatoes
sour cream or plain yogurt (for glopping on top!)
fresh sliced/dice cucumbers (for topping!)
fresh sliced tomatoes with s&p (serve on the side)
2 tbsp. sesame seeds
2 tbsp. cumin seeds
2 tbsp. olive oil
1 tsp. lemon juice
1/4 tsp. cayenne pepper
s&p to taste

Wash, scrub, peel and either cube or slice (about 1/2" thick or square) potatoes. Cook in salted water until not quite tender...10 minutes or so. Be sure not to overcook as you will be cooking them a bit more with the spices.

Heat oil w/seeds (over medium heat). Cover immediately with splatter screen. Heat until seeds "pop" open and release aroma. Add the potatoes, cook 4-5 minutes over medium heat. Add lemon juice, cayenne pepper and more s&p to taste. Cook another minute or so. If getting too dry or starting to stick, at more lemon juice or oil.

Put in a big bowl and everyone self-serves into their pita pockets topping with yogurt/sour cream and cukes. Enjoy!

Yum! I love Indian food! One of my fave is a potato and cauliflower combo. I don't think I have the recipe though :(
