Default Need specific recipes, please!

I'm about to do a 3-day detox. I need vegetarian recipes that are free of:

avocadoes
white or red potatoes
cheese
bread/flour/grains (oats & rice are ok)
nuts
lots of oils (a little oil is ok, but nothing equating to more than a T or 2 per serving)
sweeteners

I have 3 boys that I homeschool, a wonderful Hubba who puts up with my shenanigans, 2 crazy cats that hate each other, 3 working pet rabbits & 10 chickens that I adore. Day 1:
For breakfast, oatmeal (made with steel cut oats) and frozen blueberries would be awesome. If you use enough blueberries, you don't even need a sweetener. You could also add some homemade applesauce without sweetener. DS loves this! We use organic rice milk for the liquid, although you could use water.

Lunch or dinner...How about a wild rice (What is Wild Rice?) with a lot of veggies in it? You could buy a box and just add frozen veggies. You don't even have to use the butter or oil it calls for.

Lunch or dinner...Alexia Sweet Potato Fries (not oily at all), chunky salad with cukes, tomatoes, tons of fresh herbs, corn, olives, red onion, and whatever else you have on hand. Drizzle with a little EVOO and your fave vinegar.

Day 2:
Breakfast...continue with oatmeal, or cut a cantaloupe in half, seed, and top/fill with raspberries, blueberries, and any other fruit you have on hand.

Lunch...take left over rice and veggies from day one, wrap in lettuce leaves. Add tomatoes and cukes.

Dinner...spaghetti squash. Cook until tender, scrape out center with fork to create spaghetti strands. Roast some garlic at the same time to give more depth of flavor. Top with loads of tomato sauce and the roasted garlic.

Day Three:
Breakfast...Can you have eggs? If so, make a veggie omelet without cheese. Some veggies that would be great to add are red/orange/yellow bell peppers, mushrooms, and onions. Then top with your fave salsa.

Lunch...Onion Soup made with veggie broth. Or even just a vegetable soup would be good.

Dinner...Lentils with an Indian simmering sauce. Some of those can have a lot of oil in them, but just check the label at the store. Tiki Marsala is one of my favorite. Add in zucchini, yellow squash, onions, etc to up the veggie content.


You may still feel hungry in between meals, so here are a few snacks/beverages that might help with that:
Smoothies...Strawberries, blueberries, mangoes...the list is endless. Combine as many as you like or a few as you like. You can add in a banana to help with thickness. Use water as the liquid or rice/soy milk. Add in a teaspoon or two of ground flax seed.
Sliced apples are always an appetite suppressant for me.
Hummus with veggies sticks--carrots are a must!

The menu I've made is actually very similar to yours. I was hoping for recipes, to spice this up a bit. Plus if I make a recipe that serves 2-4, I can reheat with ease. I was actually planning on sweetening my oats with banana, hehe. I also figure if I can get some tasty recipes, I may be able to go longer than 3 days.

After I posted, we lost power...so I started reading some of the mags that just seem to stack up through the year. I came across what sounds like an awesome soup recipe that you could make and eat for more than one meal. (Not sure how many are doing the cleanse).

Here it is:

Vegetarian Polka Dot Stew

Prep.Total Time: 30 min.
Yeild: 5 Servings

Ingredients:
2 C Water
1 C Israeli couscous
2 medium carrots, sliced
1 plum tomato, chopped
1/4 C chopped onion
1 garlic clove, minced
2 cans (19 oz. each) ready-to-serve tomato soup
1 can (15 oz.) black beans, rinsed & drained
1 pkg (10 oz.) frozen chopped spinach, thawed and squeezed dry
1 Tbs minced fresh basil or 1 tsp dried basil
1/2 tsp salt
1/2 tsp dried oregano
1/2 tsp dried marjoram
1/4 tsp pepper

In a large saucepan, bring water to a boil. Stir in the couscous, carrots, tomato, onion, and garlic. Bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes or until tender and water is absorbed. Stir in the remaining ingredients; heat through.
You can substitute barley for the couscous...but you may have to do without both, since aren't they grains???

You could dice up some sweet potatoes instead.
